Food from 3D printer first printed lunch of 14 ingredients





Scientists from Creative Machines Lab They made a real engineering and culinary breakthrough, for the first time printing a comprehensive dish of 14 ingredients on a 3D printer, controlling the process using lasers. The technology is based on the multiple preparation method, which allows you to subtly adjust the texture – from stiffness to elasticity and “chewing” – right during printing.
According to Jonathan Bluttinger, the leading research and engineer, this approach makes it possible to create dishes with an individual structure that are as close as possible to the traditional kitchen. The results of their work are published in Journal of Food Engineering.
Typically, 3D printing is faced with one problem: pasty masses, powders or gels is difficult to turn into familiar layers and textures. Visually, everything can look beautiful, but it is the structure that determines whether a person wants it. The solution was multiple -wave textureization: with its help, lasers with different wavelengths affect the layers in order to get the right sensation with each bite. At the same time, traditional oven and slabs distribute heat unevenly, and the laser gives accurate short outbreaks of energy, controlling the depth and intensity of exposure.

The experiments showed that different lasers – blue, near and medium infrared range – allowed to create layers of dough with perfect elasticity and chewing. At the same time, comparison with conventional baking confirmed the advantages of lasers. The stove requires higher deformation to achieve the desired density, and the laser layers receive the right sensation with moderate effort.
To demonstrate the capabilities of the technology, the team created a menu of three dishes with 14 ingredients. This is the most difficult 3D print lunch today. Each layer was “debugged” so that the taste, aroma and structure are combined, and the elements of the dish – from soft creams to crispy components – interacted naturally, as in ordinary preparation.

The blunting emphasizes that laser printing can become not just technology for show or design experiments. It opens the path of a personalized kitchen, medical and plant diets, allows people to regulate the texture of food and control nutritional properties.
“We interact daily with food, and each person perceives it in his own way. Why not provide a tool for personalization using software? In the near future, such printers will become available to everyone, ”he says.
